Stuffed Red Peppers

Anyone wanting an easy fix for dinner make some “Stuffed Peppers”! Here’s what you do:

Cut the top of your pepper off as seen in the diagram above.

Cut out all seeds and rinse the inside to be sure no seeds are left. Do this to the top as well, being careful not to poke a hole through your pepper.  IF you do it is not the end of the world.

Then take some bread crumbs (don’t have bread crumbs? Take a piece of bread and RIP IT UP into tiny pieces. problem solved)  about half a cup and put it in a medium-sized bowl.

Grate 2/3 c of cheddar cheese.

Drizzle in some olive oil, some salt, pepper and basil.

If you don’t have enough to fill your pepper add more cheese and bread crumbs.  I sometimes like to add Real Bacon bits and throw them in too.

Use a sheet of aluminum foil to wrap up your peppers. SHINY SIDE IN.

Cook at 350 degrees C for 10 minutes and check.  If pepper is not soft and slightly SLIGHTLY brown then put back in for an additional 5 minutes keeping a studious eye on it. ENJOY.

Mix it all up, stuff your peppers and place the top back on.
