My First Time Cooking Tunisian Food

Ok, well seeing as my roommate is from Tunisia I have helped her make meals before but I have never done it by myself.

I made Tunisian Rice.  It took 3 hours, but is quite tasty.

First take a cup of olive oil and put it in your pot to heat up. Have all other ingredients ready to go in.  This means 1 to 1 and a half chopped red onions, 1 tablespoon of Turmeric, and thawed chicken pieces (think of a chicken breast cut into 6-8 chunks).  Put everything in pot with oil then cook on medium for 20 minutes, stirring constantly. Then add 2 and a half cups of chickpeas. Cook for another 20 minutes.

Meanwhile have 3 cups of rice already cooked and ready to go. Fill a large casserole dish / or two, with cooked rice.  Heat oven to 375 degree C.

When 20 minutes is up. remove the chicken and cover rice with the sauce and other ingredients.  Do not put chicken in but set aside covered so that it doesn’t dry out. Mix everything well in casserole dish then put in oven for another 30 minutes. Add chicken on top for ten minutes and then serve.  Makes for great leftovers too.  Serves many, as in 4 or 6 or 8 people, depending on how hungry you are 😀
